The Domaine Cheveau estate stretches on 14 hectares of vines, 11 of which are planted in Chardonnay and 3 in Gamay. 60,000 bottles are produced and the way they work the vines is very traditional. Soils have been their first priority. They have been worked since 2000 so as to provide them with more biological life. Fertilizers and herbicides have been abandoned and this has allowed the vine to grow in a more balanced environment. Therefore, yields have been altered, thanks to regular disbudding, among other reasons. Treatments are applied only when necessary, depending on the risks of diseases and soil work is adapted to each plot, according to the slope, the nature of the ground, the root-stock and the vigor.

Grapes have always been picked by hand but the date of the harvest has been delayed so as to reach as high a natural sugar content as possible, despite the risks of rain. Wines are fermented and aged in oak casks for the premium “Vieilles Vignes” cuvée, in Burgundy barrels (“foudres”) and in casks for the “Trois Terroirs” blending.
