Domaine De Charmoy
The Seguinot family has been producing wine in their 13 hectare vineyard in the village of Maligny, 8 kilometres north of Chablis, since at least the 18th century. I have chosen, together with Jean-Francois Bordet, the young owner (to whom his grandfather, Roger Seguinot handed over the reins in 1998) Chablis exclusively , which we have chosen to call Domaine du Charmoy, the name of an area in Chamilly. The vineyard benefits from land rich in calcium and sediments and Jean-Francois places particular emphasis on obtaining the best fruit possible, through careful pruning and harvesting. He practices cool fermentation and allows his wine to mature for 3 to 5 months on their lies, which maximizes the circulation of the aromas in the wine.
