Domaine De Charmoy OMAINE DE CHARMOY
For centuries, the Seguinot family has tended to their 13-hectare vineyard located in the village of Maligny, just 8 kilometers north of Chablis, dating back to at least the 18th century. In collaboration with Jean-Francois Bordet, the current owner who took over from his grandfather Roger Seguinot in 1998, they have exclusively focused on producing Chablis under the name Domaine du Charmoy, inspired by a specific area in Chamilly. Benefiting from calcium-rich soil and sediments, Jean-Francois employs meticulous techniques such as careful pruning and harvesting to ensure the highest quality fruit. His winemaking approach involves cool fermentation and aging on lees for 3 to 5 months, enhancing the circulation of aromas in the wine and reflecting the essence of their terroir.
Domaine Roy
For over two centuries, the Roy family has tended to vines in Fontenay, just north of Chablis. Today, Claude Roy, alongside his daughter Karine and nephew David, oversees the cultivation of 20 hectares of vineyards along the right bank of the River Serein. Renowned as one of the largest proprietors of grands crus, including a remarkable 3.5-hectare plot in Bougros, they have recently transitioned to bottling a significant portion of their harvest, a departure from previous bulk sales to négociants. Chateau de Mercues
Georges Vigouroux’s foremost objective upon acquiring Château de Mercuès in 1983 was the revitalization of the vineyard, primarily focusing on the surrounding gravely hillocks in the communes of Caillac and Mercuès. Acquired plots were meticulously replanted, and a chai was constructed beneath the château gardens. Notably, the estate employs a viticultural method reminiscent of pre-phylloxera times, marked by significantly increased planting density. The history of Cahors vineyards traces back to Roman times, with references to its renowned black wine even at the wedding of Eleanor of Aquitaine and Henry II of England in 1152. Devastated by phylloxera in 1865, vineyards persisted with lesser-quality hybrids until efforts in the 1970s paved the way for the resurgence of authentic varietals. Today, Cahors wines undergo a true rebirth, with renewed recognition of their terroir and craftsmanship, marking a significant milestone in their journey of improvement and acclaim.

Santalba Winery derives its name from the fusion of its owner and founder’s name and surname: Santiago Ijalba. Valduero
Bodegas Valduero, founded in 1984 by current president Don Gregorio Garcia Viadero and his daughter Yolanda, stands as one of the pioneering wineries within the D.O. Ribera del Duero. Situated in Gumiel de Mercado, Burgos province, renowned for cultivating some of Ribera del Duero’s finest grapes, the winery boasts an altitude of 840 meters (2,750 ft), making it one of the highest in the region. Their red wines, crafted exclusively from 100% Tinto Fino grapes sourced from their own goblet vineyards, reflect the essence of the terroir.
